This creamy Tuscan shrimp skillet is a quick and easy one-pan dinner. It’s packed with flavor and ready in minutes.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 cup sun-dried tomatoes, oil-packed, drained
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add shrimp and cook until pink, about 2-3 minutes per side. Remove from skillet.
  3. Add bell pepper to the skillet and cook until softened, about 5 minutes.
  4. Stir in sun-dried tomatoes and garlic. Cook for 1 minute.
  5. Pour in heavy cream and bring to a simmer.
  6. Stir in Parmesan cheese and basil. Season with salt and pepper.
  7. Return shrimp to the skillet and heat through.
  8. Serve immediately.
