Description

A comforting and easy Crock Pot Chicken and Dumplings recipe, perfect for a hearty meal.


Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cans (10.5 ounces each) condensed cream of chicken soup
  • 1/2 cup milk
  • 1 can (8 ounces) refrigerated biscuit cut into quarters


Instructions

  1. Place chicken, onion, carrots, and celery in the slow cooker.
  2. Pour in chicken broth and add thyme, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
  4. Remove chicken and shred it. Return shredded chicken to the slow cooker.
  5. Stir in cream of chicken soup and milk.
  6. Bring to a simmer, then add biscuit pieces.
  7. Cover and cook for 15-20 minutes, or until dumplings are cooked through.

Notes

  • For a thicker soup, you can thicken it with a cornstarch slurry before adding the dumplings.
  • Feel free to add other vegetables like peas or corn.
