Ingredients
- 2 pounds boneless, skinless chicken breasts or thighs
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cans (10.5 ounces each) condensed cream of chicken soup
- 1/2 cup milk
- 1 can (8 ounces) refrigerated biscuit cut into quarters
Instructions
- Place chicken, onion, carrots, and celery in the slow cooker.
- Pour in chicken broth and add thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
- Remove chicken and shred it. Return shredded chicken to the slow cooker.
- Stir in cream of chicken soup and milk.
- Bring to a simmer, then add biscuit pieces.
- Cover and cook for 15-20 minutes, or until dumplings are cooked through.
Notes
- For a thicker soup, you can thicken it with a cornstarch slurry before adding the dumplings.
- Feel free to add other vegetables like peas or corn.
