Description

Crock Pot Chicken Pot Pie is creamy, hearty, and easy to make! Let your slow cooker do the work for this comforting family favorite.

Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Yukon Gold potatoes
  • Carrots
  • Frozen peas
  • Cream of chicken soup
  • Milk
  • Salt
  • Pepper
  • Herbs and spices (optional)

Instructions

  • In a large slow cooker, combine the diced chicken, cubed potatoes, sliced carrots, and drained peas. Gently stir to mix the ingredients.
  • In a separate bowl, whisk together the cream of chicken soup, milk, and seasonings. Pour the soup mixture over the ingredients in the slow cooker and stir to coat everything evenly.
  • Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the vegetables are tender. Stir the mixture occasionally during the cooking process.
  • About 30 minutes before the cooking time is up, prepare your favorite pie crust or biscuit dough.
  • Once the Crock Pot Chicken Pot Pie filling is ready, transfer it to a baking dish. Top with the prepared pie crust or biscuit dough, cutting slits in the top to allow steam to escape.
  • Bake the dish in a preheated 400°F oven for 20-25 minutes, or until the crust is golden brown and flaky.
  • Remove the Crock Pot Chicken Pot Pie from the oven and let it cool for a few minutes before serving.
