Description

Easy Crockpot BBQ Chicken & Potatoes is a family favorite. It’s simple to make and packed with flavor.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 2 lbs small red potatoes, quartered
  • 1 large onion, chopped
  • 1 cup BBQ sauce
  • 1/2 cup chicken broth
  • Salt and pepper to taste


Instructions

  1. Place potatoes and onion in the bottom of the crockpot.
  2. Season chicken breasts with salt and pepper.
  3. Place chicken on top of the potatoes and onions.
  4. Pour BBQ sauce and chicken broth over the chicken.
  5. Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and potatoes are tender.
  6. Shred the chicken with two forks.
  7. Stir the chicken back into the sauce.
  8. Serve and enjoy!

Notes

  • You can add other vegetables like carrots or bell peppers.
  • For a spicier dish, use a spicy BBQ sauce.
  • Serve with a side of coleslaw or a green salad.
