Description
Easy Crockpot BBQ Chicken & Potatoes is a family favorite. It’s simple to make and packed with flavor.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 2 lbs small red potatoes, quartered
- 1 large onion, chopped
- 1 cup BBQ sauce
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- Place potatoes and onion in the bottom of the crockpot.
- Season chicken breasts with salt and pepper.
- Place chicken on top of the potatoes and onions.
- Pour BBQ sauce and chicken broth over the chicken.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and potatoes are tender.
- Shred the chicken with two forks.
- Stir the chicken back into the sauce.
- Serve and enjoy!
Notes
- You can add other vegetables like carrots or bell peppers.
- For a spicier dish, use a spicy BBQ sauce.
- Serve with a side of coleslaw or a green salad.
