Easy Crockpot Honey Garlic Chicken & Potatoes. A simple and flavorful one-pot meal.
Ingredients
- Chicken thighs: 6-8
- Potatoes: 1.5 lbs, cubed
- Honey: 1/2 cup
- Soy sauce: 1/4 cup
- Garlic: 4 cloves, minced
- Olive oil: 1 tbsp
- Salt and pepper: to taste
- Cornstarch: 1 tbsp (optional, for thickening)
Instructions
- Place potatoes in the crockpot.
- Add chicken thighs on top of the potatoes.
- In a bowl, whisk together honey, soy sauce, and minced garlic.
- Pour the honey garlic mixture over the chicken and potatoes.
- Season with salt and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- If you want a thicker sauce, mix cornstarch with a little cold water and stir into the crockpot during the last 30 minutes of cooking.
Notes
- You can add other vegetables like carrots or onions.
- Adjust the honey and soy sauce to your taste.
- Serve with rice or your favorite side dish.
