Description

A delicious and easy Crockpot Tuscan Chicken with spinach and a creamy sauce.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 (10 ounce) package frozen spinach, thawed and squeezed dry
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Place chicken breasts in the crockpot.
  2. Pour in diced tomatoes and chicken broth.
  3. Season with Italian seasoning, garlic powder, salt, and pepper.
  4. Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
  5. Shred the chicken with two forks.
  6. Stir in heavy cream, Parmesan cheese, and spinach.
  7. Cook for an additional 15-20 minutes, or until heated through.
  8. Serve hot.
