Description
A hearty and flavorful white chicken chili made easily in a crockpot. Perfect for a comforting meal with minimal effort.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (4 oz) diced green chiles
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup sour cream
- 1 cup shredded Monterey Jack cheese
- Fresh cilantro for garnish
Instructions
- Place chicken breasts in the crockpot.
- Add white beans, corn, green chiles, onion, garlic, chicken broth, cumin, oregano, salt, and pepper.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Remove chicken, shred it, and return to the crockpot.
- Stir in sour cream and shredded cheese until melted.
- Serve hot, garnished with fresh cilantro.
Notes
- For extra creaminess, add more sour cream or cheese.
- Adjust spices to taste if you prefer a stronger flavor.
- Serve with tortilla chips or warm bread.
