Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chiles
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • Fresh cilantro for garnish


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add white beans, corn, green chiles, onion, garlic, chicken broth, cumin, oregano, salt, and pepper.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. Remove chicken, shred it, and return to the crockpot.
  5. Stir in sour cream and shredded cheese until melted.
  6. Serve hot, garnished with fresh cilantro.
