A comforting and flavorful casserole featuring tender chicken and savory stuffing, perfect for any occasion.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can (10.5 oz) condensed cream of chicken soup
- 1/2 cup milk
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup chopped pimento (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup butter, melted
- 1 package (6 oz) dry herb-seasoned stuffing mix
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/4 cup water
- 1/2 cup shredded cheddar cheese (optional topping)
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine shredded chicken, cream of chicken soup, milk, chopped onion, chopped celery, pimento (if using), salt, and pepper.
- In a separate bowl, combine the dry stuffing mix with the melted butter.
- Spread half of the stuffing mixture in the bottom of a greased 9×13 inch baking dish.
- Pour the chicken mixture over the stuffing.
- Top with the remaining stuffing mixture.
- In a small bowl, whisk together the cream of mushroom soup and water. Pour evenly over the top of the casserole.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for another 10-15 minutes, or until the topping is golden brown and the casserole is bubbly.
- If desired, sprinkle with cheddar cheese during the last 5 minutes of baking.
- Let stand for 5-10 minutes before serving.
Notes
- You can use leftover cooked chicken or rotisserie chicken.
- For a richer flavor, use half-and-half instead of milk.
- Add other vegetables like peas or carrots to the chicken mixture.
- Serve hot with a side salad or green beans.
