Description

A comforting and flavorful casserole featuring tender chicken and savory stuffing, perfect for any occasion.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup milk
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 cup chopped pimento (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup butter, melted
  • 1 package (6 oz) dry herb-seasoned stuffing mix
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/4 cup water
  • 1/2 cup shredded cheddar cheese (optional topping)


Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine shredded chicken, cream of chicken soup, milk, chopped onion, chopped celery, pimento (if using), salt, and pepper.
  3. In a separate bowl, combine the dry stuffing mix with the melted butter.
  4. Spread half of the stuffing mixture in the bottom of a greased 9×13 inch baking dish.
  5. Pour the chicken mixture over the stuffing.
  6. Top with the remaining stuffing mixture.
  7. In a small bowl, whisk together the cream of mushroom soup and water. Pour evenly over the top of the casserole.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake for another 10-15 minutes, or until the topping is golden brown and the casserole is bubbly.
  10. If desired, sprinkle with cheddar cheese during the last 5 minutes of baking.
  11. Let stand for 5-10 minutes before serving.

Notes

  • You can use leftover cooked chicken or rotisserie chicken.
  • For a richer flavor, use half-and-half instead of milk.
  • Add other vegetables like peas or carrots to the chicken mixture.
  • Serve hot with a side salad or green beans.
