Description
A simple and healthy chicken burrito casserole.
Ingredients
- 1 lb cooked chicken, shredded
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 cup salsa
- 1/2 cup chopped onion
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 6-8 gluten-free tortillas
- Optional toppings: avocado, cilantro, dairy-free cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine chicken, black beans, corn, salsa, onion, chili powder, cumin, salt, and pepper.
- Spread a thin layer of the chicken mixture in a baking dish.
- Layer tortillas over the chicken mixture.
- Top with remaining chicken mixture.
- Bake for 20-25 minutes, or until heated through.
- Add toppings and serve.
Notes
- You can use rotisserie chicken to save time.
- Adjust spices to your taste.
- For a dairy-free option, use dairy-free cheese or omit cheese.
