Description

A simple and healthy chicken burrito casserole.


Ingredients

  • 1 lb cooked chicken, shredded
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 cup salsa
  • 1/2 cup chopped onion
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 6-8 gluten-free tortillas
  • Optional toppings: avocado, cilantro, dairy-free cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine chicken, black beans, corn, salsa, onion, chili powder, cumin, salt, and pepper.
  3. Spread a thin layer of the chicken mixture in a baking dish.
  4. Layer tortillas over the chicken mixture.
  5. Top with remaining chicken mixture.
  6. Bake for 20-25 minutes, or until heated through.
  7. Add toppings and serve.

Notes

  • You can use rotisserie chicken to save time.
  • Adjust spices to your taste.
  • For a dairy-free option, use dairy-free cheese or omit cheese.
