Description
A simple and delicious chicken dinner ready in under 30 minutes.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- Cooked pasta or rice, for serving
Instructions
- Cut chicken into bite-sized pieces.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned.
- Add onion and bell pepper; cook until softened.
- Stir in garlic, diced tomatoes, oregano, salt, and pepper.
- Bring to a simmer and cook for 10-15 minutes, or until chicken is cooked through.
- Serve over cooked pasta or rice.
Notes
- You can substitute other vegetables like zucchini or mushrooms.
- Adjust seasonings to your preference.
- Leftovers can be stored in the refrigerator for up to 3 days.
