A simple and hearty cheeseburger soup made in your crockpot. Perfect for a comforting meal on a chilly evening.
Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups diced potatoes
- 1 cup shredded carrots
- 1 tsp salt
- 0.5 tsp black pepper
- 1 cup milk
- 8 oz Velveeta cheese, cubed
- 0.5 cup shredded cheddar cheese
- Optional toppings: cooked bacon, sour cream, green onions
Instructions
- Brown ground beef in a skillet over medium heat. Drain fat.
- Add browned beef, chopped onion, and minced garlic to your crockpot.
- Stir in beef broth, diced potatoes, shredded carrots, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in milk, Velveeta cheese, and cheddar cheese.
- Stir until cheeses are melted and soup is creamy.
- Serve hot with your favorite toppings.
Notes
- For a thicker soup, you can whisk together 2 tablespoons of cornstarch with 2 tablespoons of water and stir it into the soup during the last 30 minutes of cooking.
