Description
A quick and easy low-carb version of the classic egg roll, made in a bowl with simple ingredients.
Ingredients
- 1 lb ground pork
- 1 tbsp sesame oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1/2 head cabbage, shredded
- 1 large carrot, julienned
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 tsp red pepper flakes
- 2 green onions, sliced
- 1 tbsp sesame seeds
Instructions
- Heat sesame oil in a large skillet over medium-high heat.
- Add ground pork and cook until browned, breaking it into small pieces.
- Add onion, garlic, and ginger. Cook for 2 minutes until fragrant.
- Stir in cabbage and carrot. Cook for 5 minutes until vegetables soften.
- Pour in soy sauce and rice vinegar. Mix well.
- Sprinkle with red pepper flakes and stir to combine.
- Top with green onions and sesame seeds before serving.
Notes
- Use ground chicken or turkey for a leaner option.
- Add more vegetables like bell peppers or mushrooms if desired.
- Store leftovers in an airtight container for up to 3 days.
