Ingredients
- 8 oz pasta (penne or fettuccine)
- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 3 cloves garlic (minced)
- 1/4 cup grated parmesan cheese
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 1 tbsp fresh parsley (chopped)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large pan over medium heat. Add chicken and cook until no longer pink (about 5-6 minutes).
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in cooked pasta, parmesan cheese, salt, black pepper, and red pepper flakes. Toss well.
- Garnish with fresh parsley and serve immediately.
Notes
- Use whole wheat pasta for added fiber.
- Adjust red pepper flakes for less or more spice.
- Store leftovers in an airtight container for up to 3 days.
