Simple and nutritious apple cinnamon muffins.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup diced apple
Instructions
- Preheat oven to 375°F (190°C).
- Whisk together flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, combine milk, oil, egg, and vanilla.
- Add wet ingredients to dry ingredients and mix until just combined.
- Gently fold in diced apples.
- Fill muffin cups 2/3 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Let cool before serving.

- Use your favorite type of apple.
- Add a streusel topping for extra flavor.
- Store leftovers in an airtight container.
