Simple and nutritious pumpkin banana muffins.


Ingredients

  • 1 cup pumpkin puree
  • 2 ripe bananas, mashed
  • 1/2 cup rolled oats
  • 1/4 cup honey
  • 1 egg
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of salt


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mash bananas in a bowl.
  3. Add pumpkin puree, honey, and egg. Mix well.
  4. In a separate bowl, combine oats, baking soda, cinnamon, nutmeg, and salt.
  5. Add dry ingredients to wet ingredients. Stir until just combined.
  6. Fill muffin cups.
  7. Bake for 18-20 minutes.
  8. Let cool before serving.
