These easy and healthy pumpkin oat muffins are perfect for breakfast or a snack.
Ingredients
- 1 1/2 cups rolled oats
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1 cup pumpkin puree
- 1/2 cup milk
- 1/4 cup maple syrup
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix oats, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, combine pumpkin puree, milk, maple syrup, egg, and vanilla.
- Add wet ingredients to dry ingredients. Stir until just combined.
- Fill muffin cups.
- Bake for 18-20 minutes.
- Let cool before enjoying.
Notes
- You can add chocolate chips or chopped nuts.
- Store leftovers in an airtight container.
