Description

These easy and healthy pumpkin oat muffins are perfect for breakfast or a snack.


Ingredients

  • 1 1/2 cups rolled oats
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 cup pumpkin puree
  • 1/2 cup milk
  • 1/4 cup maple syrup
  • 1 large egg
  • 1 tsp vanilla extract


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix oats, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine pumpkin puree, milk, maple syrup, egg, and vanilla.
  4. Add wet ingredients to dry ingredients. Stir until just combined.
  5. Fill muffin cups.
  6. Bake for 18-20 minutes.
  7. Let cool before enjoying.

Notes

  • You can add chocolate chips or chopped nuts.
