Description
Easy lemon cookie bars with a soft cookie base.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup lemon curd
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, sugar, and salt.
- Add butter and mix until crumbly.
- Add egg and vanilla, mix until combined.
- Press dough into a baking pan.
- Spread lemon curd over the dough.
- Bake for 20-25 minutes.
- Let cool completely before cutting.
Notes
- You can use store-bought or homemade lemon curd.
- For a sweeter bar, add more sugar.
