A simple and delicious low-carb chicken casserole.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets, steamed
  • 1 cup cheddar cheese, shredded
  • 1/2 cup cream cheese
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine cooked chicken, broccoli, and half of the cheddar cheese.
  3. In a separate bowl, mix cream cheese, sour cream, heavy cream, and garlic powder. Season with salt and pepper.
  4. Pour the cream cheese mixture over the chicken and broccoli. Stir to combine.
  5. Transfer the mixture to a baking dish.
  6. Top with the remaining cheddar cheese.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Let cool slightly before serving.

Notes

  • You can add other vegetables, like cauliflower or spinach.
  • For extra flavor, add a pinch of red pepper flakes.
