A simple and creamy orzo pasta dish with mushrooms and spinach. Perfect for a quick weeknight meal or a flavorful side dish.
Ingredients
- 1 cup orzo pasta
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 2 cups vegetable broth
- 1/4 cup heavy cream
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until softened.
- Add mushrooms and cook until they release their moisture and turn golden.
- Stir in orzo pasta and toast lightly for 1-2 minutes.
- Pour in vegetable broth and bring to a simmer. Cook until orzo is tender, about 10 minutes.
- Add spinach and stir until wilted.
- Reduce heat to low and stir in heavy cream and Parmesan cheese.
- Season with salt, black pepper, and red pepper flakes if desired. Serve warm.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat with a splash of broth or water to maintain creaminess.
- Substitute vegetable broth with chicken broth if not vegetarian.
