Ingredients
- 1.5 cups all-purpose flour
- 1 teaspoon baking soda
- 0.5 teaspoon salt

- 1 cup granulated sugar
- 0.5 cup unsalted butter, melted
- 2 large eggs
- 1 cup pumpkin puree
- 0.5 cup milk
- 1 teaspoon vanilla extract
- For the Streusel Topping:
- 0.5 cup all-purpose flour
- 0.25 cup packed brown sugar
- 0.25 teaspoon ground cinnamon
- 0.25 cup cold unsalted butter, cut into small pieces
Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it well.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, whisk together the granulated sugar, melted butter, and eggs until well combined.
- Stir in the pumpkin puree, milk, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Prepare the streusel topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Spoon the muffin batter evenly into the prepared muffin cups, filling each about two-thirds full.
- Sprinkle the streusel topping generously over the batter in each muffin cup.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Ensure you use pumpkin puree, not pumpkin pie filling.
- For a richer flavor, you can add 0.5 cup of chopped pecans or walnuts to the streusel topping.
