Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 lbs potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tbsp butter
  • 1/4 cup shredded cheddar cheese (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
  3. Add onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
  4. Stir in garlic and cook for 1 minute more until fragrant.
  5. Pour in beef broth and Worcestershire sauce. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
  6. Stir in thyme, salt, and pepper. Set aside.
  7. While the filling is simmering, boil potatoes in a pot of salted water until tender, about 15-20 minutes.
  8. Drain potatoes and return them to the pot. Add milk and butter. Mash until smooth and creamy. Season with salt and pepper.
  9. Spread the meat filling evenly in a 9×13 inch baking dish.
  10. Top the filling with the mashed potatoes, spreading evenly. If using, sprinkle cheddar cheese over the top.
  11. Bake for 20-25 minutes, or until the top is golden brown and the filling is bubbly.
  12. Let stand for a few minutes before serving.

  • For a healthier version, use lean ground turkey or chicken instead of beef.
  • Add frozen peas or corn to the meat filling for extra vegetables.
