Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1 1/2 cups eggnog
  • 1/4 cup dark rum (optional)
  • Whipped cream, for topping


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. Bake the crust for 8-10 minutes. Remove from oven and let cool.
  4. In a large bowl, beat cream cheese and 1 1/2 cups sugar until smooth.
  5. Beat in eggs one at a time, mixing well after each addition.
  6. Stir in vanilla extract, nutmeg, and cinnamon.
  7. Gradually blend in eggnog and rum (if using).
  8. Pour the filling over the prepared crust.
  9. Bake for 60-75 minutes, or until the center is almost set.
  10. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
  11. Remove from oven and let cool completely on a wire rack.
  12. Chill in the refrigerator for at least 4 hours, or overnight.
  13. Serve topped with whipped cream.
