These eggnog cookies are a festive treat perfect for the holidays. They are soft, chewy, and packed with the warm spices and flavor of eggnog.
Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup eggnog
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, salt, nutmeg, and cinnamon. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the eggnog, beginning and ending with the dry ingredients. Mix until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Dust with powdered sugar, if desired, once cooled.
Notes
- For a stronger eggnog flavor, you can add a tablespoon of rum or brandy.
- These cookies store well in an airtight container for up to 5 days.
