Ingredients

  • Pasta (e.g., penne, rotini): 1 pound
  • Corn: 4 cups (fresh or frozen)
  • Red bell pepper: 1, diced
  • Red onion: 1/2, diced
  • Cilantro: 1/2 cup, chopped
  • Cotija cheese: 1/2 cup, crumbled
  • Mayonnaise: 1/2 cup
  • Lime juice: 2 tablespoons
  • Chili powder: 1 teaspoon
  • Garlic powder: 1/2 teaspoon
  • Salt: to taste
  • Black pepper: to taste


Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. If using fresh corn, grill or roast until slightly charred. If using frozen, thaw.
