Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 large sweet potatoes, peeled and cubed
- 1 red onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon dried Italian herbs
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large oven-safe skillet, combine sweet potatoes, red onion, and olive oil. Season with salt, pepper, and Italian herbs.
- Roast for 15 minutes.
- Add the chicken and minced garlic to the skillet. Toss to combine.
- Continue roasting for 20-25 minutes, or until chicken is cooked through and sweet potatoes are tender.
- Garnish with fresh parsley before serving.
