Ingredients
- 2 large sweet potatoes, scrubbed and cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sweet potato wedges with olive oil, garlic powder, salt, and pepper until evenly coated.
- Spread the wedges in a single layer on a baking sheet.
- Bake for 20 minutes.
- Remove from oven, sprinkle with Parmesan cheese, and bake for another 10-15 minutes, or until tender and lightly browned.
- Garnish with fresh parsley, if desired.
Notes
- For extra crispy wedges, soak the cut sweet potatoes in cold water for 30 minutes before baking.
- Adjust garlic and Parmesan amounts to your preference.
