Easy no-bake gingerbread truffles. Perfect for holiday parties and festive treats. Rich and spiced, these bites are a quick way to satisfy your gingerbread craving.

Ingredients

  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon ground gingerbread spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1 cup gingerbread cookie crumbs (about 25-30 cookies, finely crushed)
  • 1 cup white chocolate chips, melted
  • Optional: Red and green sprinkles for decoration

Instructions

  1. In a medium bowl, beat the softened cream cheese and powdered sugar until smooth.
  2. Stir in the gingerbread spice, cinnamon, ginger, and cloves.
  3. Add the gingerbread cookie crumbs and mix until well combined.
  4. Roll the mixture into 1-inch balls. Place them on a baking sheet lined with parchment paper.
  5. Chill the balls in the refrigerator for at least 30 minutes, or until firm.
  6. Melt the white chocolate chips according to package directions.
  7. Dip each chilled truffle into the melted white chocolate, ensuring it’s fully coated.
  8. Place the coated truffles back on the parchment-lined baking sheet.
  9. If desired, immediately sprinkle with red and green sprinkles before the chocolate sets.
  10. Refrigerate the truffles until the chocolate coating is firm.

Notes

  • For best results, use finely crushed gingerbread cookies.
  • Make sure the cream cheese is fully softened for a smooth mixture.
  • Chill the truffle balls sufficiently to make dipping easier.
