Description

Classic Golumpki, savory cabbage rolls filled with a flavorful meat and rice mixture, simmered in a rich tomato sauce.


Ingredients

  • 1 large head of cabbage
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano


Instructions

  1. Carefully remove the outer leaves of the cabbage.
  2. Core the cabbage.
  3. Boil the cabbage in a large pot of water until the leaves are softened.
  4. Mix together ground beef, ground pork, cooked rice, onion, garlic, egg, parsley, salt, and pepper.
  5. Place a spoonful of the meat mixture in the center of each cabbage leaf.
  6. Roll up the leaf, tucking in the sides.
  7. In a large pot, combine crushed tomatoes, tomato sauce, brown sugar, basil, and oregano.
  8. Place the cabbage rolls in the tomato sauce.
  9. Simmer for at least 1 hour, or until the cabbage rolls are tender.

Notes

  • You can add a bay leaf to the sauce for extra flavor.
  • Serve with a dollop of sour cream or a sprinkle of fresh parsley.
  • Leftovers taste even better the next day.
