Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup Kalamata olives, halved
  • 1/2 cup crumbled feta cheese
  • Lemon wedges, for serving


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut chicken breasts into bite-sized pieces.
  3. In a bowl, toss chicken with olive oil, oregano, basil, garlic powder, salt, and pepper.
  4. Spread chicken on a baking sheet.
  5. Bake for 20-25 minutes, or until cooked through.
  6. While chicken is baking, prepare quinoa according to package directions.
