Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup cooked quinoa
- 1 cup chopped cucumber
- 1 cup chopped tomatoes
- 1/2 cup Kalamata olives, halved
- 1/2 cup crumbled feta cheese
- Lemon wedges, for serving
Instructions
- Preheat oven to 400°F (200°C).
- Cut chicken breasts into bite-sized pieces.
- In a bowl, toss chicken with olive oil, oregano, basil, garlic powder, salt, and pepper.
- Spread chicken on a baking sheet.
- Bake for 20-25 minutes, or until cooked through.
- While chicken is baking, prepare quinoa according to package directions.
- Chop cucumber and tomatoes.
- Assemble bowls: add quinoa, chicken, cucumber, tomatoes, olives, and feta.
- Serve with lemon wedges.

- You can substitute chicken with chickpeas for a vegetarian option.
