Description
A classic Greek soup with tender chicken, rice, and a bright lemon flavor.
Ingredients
- 4 cups chicken broth
- 1 cup cooked chicken, shredded
- 1/2 cup long-grain rice
- 2 lemons, juiced
- 2 eggs
- Salt and pepper to taste
- Fresh dill for garnish (optional)
Instructions
- In a pot, bring chicken broth to a boil.
- Add rice and cook until tender.
- Add shredded chicken.
- In a separate bowl, whisk eggs and lemon juice.
- Slowly temper the egg mixture by adding a small amount of hot broth while whisking constantly.
- Pour the egg-lemon mixture into the soup, stirring gently.
- Season with salt and pepper.
- Garnish with fresh dill, if desired.
Notes
- Adjust lemon juice to your taste.
- You can use leftover roasted chicken.
- For a thicker soup, add a tablespoon of cornstarch mixed with cold water to the broth.
