Ingredients
- Boneless, skinless chicken thighs
- Red onion
- Zucchini
- Cherry tomatoes
- Olive oil
- Dried oregano
- Garlic powder
- Paprika
- Salt and pepper
- Fresh lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels and set aside.
- Chop the onion into wedges, slice the zucchini into half-moons, and halve the cherry tomatoes.
- In a large bowl, combine the chicken thighs, chopped onion, sliced zucchini, and halved tomatoes. Drizzle with olive oil and sprinkle with dried oregano, garlic powder, paprika, salt, and pepper. Toss everything together until the chicken and veggies are evenly coated.
- Spread the seasoned chicken and veggie mixture out in a single layer on a large, rimmed baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender and lightly charred.
- Remove the sheet pan from the oven and drizzle the hot chicken and veggies with a generous squeeze of fresh lemon juice. Toss everything together to coat the ingredients evenly.
- Serve immediately, garnished with freshly chopped parsley or oregano if desired.
