Enjoy light and fluffy Greek yogurt chocolate chip muffins. A healthier twist on a classic.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 cup Greek yogurt
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 375°F (190°C).
- Whisk together flour, baking soda, and salt.
- In a separate bowl, whisk sugars, egg, yogurt, applesauce, and vanilla.
- Combine wet and dry ingredients. Do not overmix.
- Gently fold in chocolate chips.
- Fill muffin cups.
- Bake for 18-20 minutes.
- Let cool before serving.
Notes
- Use mini chocolate chips for even distribution.
- Add a sprinkle of extra chocolate chips on top.
- Store muffins in an airtight container.
