These Greek Yogurt Lemon Blueberry Muffins are a healthy and delicious treat. They are easy to make and perfect for breakfast or a snack.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup Greek yogurt
- 1/4 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the Greek yogurt, milk, oil, eggs, lemon zest, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the blueberries.
- Fill the muffin liners about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- You can substitute the blueberries with other berries.
- For a sweeter muffin, add more sugar.
- Store muffins in an airtight container at room temperature for up to 3 days.
