These Greek Yogurt Lemon Muffins are fresh and fluffy. They are easy to make and perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup Greek yogurt
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh lemon juice


Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the Greek yogurt, milk, oil, eggs, lemon zest, vanilla extract, and lemon juice.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Fill the muffin liners about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra lemon flavor, you can make a lemon glaze with powdered sugar and lemon juice.
