Description

A quick and easy ground beef and rice skillet recipe, perfect for a weeknight dinner. This one-pan meal is flavorful and satisfying.


Ingredients

  • 1 pound ground beef
  • 1 cup white rice, uncooked
  • 2 cups beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 cup shredded cheese (optional)


Instructions

  1. Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the uncooked rice, beef broth, diced tomatoes, salt, pepper, and oregano to the skillet.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and most of the liquid is absorbed.
  6. Stir occasionally to prevent sticking.
  7. If using, sprinkle shredded cheese over the top during the last few minutes of cooking and cover until melted.
  8. Serve hot.

Notes

  • For a spicier dish, add a pinch of red pepper flakes with the other seasonings.
  • You can substitute brown rice for white rice, but you may need to increase the cooking time and liquid.
