A quick and easy ground beef and rice skillet recipe, perfect for a weeknight dinner. This one-pan meal is flavorful and satisfying.
Ingredients
- 1 pound ground beef
- 1 cup white rice, uncooked
- 2 cups beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 cup shredded cheese (optional)
Instructions
- Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the uncooked rice, beef broth, diced tomatoes, salt, pepper, and oregano to the skillet.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and most of the liquid is absorbed.
- Stir occasionally to prevent sticking.
- If using, sprinkle shredded cheese over the top during the last few minutes of cooking and cover until melted.
- Serve hot.
Notes
- For a spicier dish, add a pinch of red pepper flakes with the other seasonings.
- You can substitute brown rice for white rice, but you may need to increase the cooking time and liquid.
- Add your favorite vegetables like peas, corn, or bell peppers for extra flavor and nutrition.
