Description

Make delicious and healthy ground turkey and sweet potato protein bowls. These bowls are perfect for meal prep.


Ingredients

  • 1 pound ground turkey
  • 1 large sweet potato, peeled and diced
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 1 cup cooked quinoa
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup salsa
  • 1 avocado, diced
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato, red onion, and bell pepper with olive oil, salt, and pepper.
  3. Roast vegetables for 20-25 minutes, or until tender.
  4. Cook ground turkey in a pan until browned. Drain any excess fat. Season with salt and pepper.
  5. Assemble bowls with quinoa, ground turkey, roasted vegetables, black beans, salsa, and avocado.
