Ingredients

  • 1 lb ground turkey
  • 3 medium Yukon Gold or russet potatoes, peeled and diced
  • 1 medium yellow or white onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 cup chicken or vegetable broth
  • Salt and black pepper to taste


Instructions

  • Begin by peeling and dicing the potatoes into 1-inch cubes. Place the cubed potatoes in a bowl of cold water to prevent them from turning brown while you prepare the other ingredients.
  • In a large skillet or Dutch oven, heat a tablespoon of olive oil over medium-high heat. Add the ground turkey and break it up with a wooden spoon or spatula as it cooks, until it’s no longer pink and has a nice, even browning, about 5-7 minutes.
  • Once the ground turkey is browned, add the diced onions to the skillet and sauté for 3-4 minutes, or until the onions are translucent and fragrant. Then, add the minced garlic and continue cooking for an additional minute, being careful not to let the garlic burn.
  • Drain the cubed potatoes and add them to the skillet with the ground turkey and onions. Pour in enough chicken or vegetable broth to just cover the potatoes. Bring the mixture to a boil, then reduce the heat to medium-low, cover the skillet, and let the potatoes simmer for 15-20 minutes, or until they are fork-tender.
  • Once the potatoes are cooked through, season the ground turkey and potatoes with salt, black pepper, and any other desired herbs or spices (such as dried thyme, rosemary, or paprika). Taste and adjust the seasoning as needed. If the mixture seems dry, you can add a splash of broth or water to reach your desired consistency.
