Description
A healthy and delicious bruschetta chicken pasta dish, perfect for a nutritious meal.
Ingredients
- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 8 ounces whole wheat pasta
- 2 cups cherry tomatoes, halved
- 1/2 cup chopped fresh basil
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook whole wheat pasta according to package directions until al dente. Drain, reserving about 1/2 cup of pasta water.
- While pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through. Season with salt and pepper. Remove chicken from skillet and set aside.
- Add the remaining 1 tablespoon of olive oil to the skillet. Add minced garlic and cook for about 30 seconds until fragrant.
- Add halved cherry tomatoes to the skillet and cook for 3-5 minutes until they begin to soften.
- Stir in the chopped red onion and cook for another 2 minutes.
- Return the cooked chicken to the skillet. Add the cooked pasta, chopped fresh basil, and balsamic vinegar.
- Toss everything together to combine. If the pasta seems dry, add a little of the reserved pasta water to create a light sauce.
- Season with additional salt and pepper if needed. Serve immediately.
Notes
- For a spicier dish, add a pinch of red pepper flakes with the garlic.
- You can substitute other vegetables like zucchini or bell peppers.
- Ensure chicken is cooked through before serving.
