Ingredients
- 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
- 1 large sweet potato, peeled and diced
- 1 cup cooked brown rice
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss chicken and sweet potato with olive oil, paprika, garlic powder, salt, and pepper on a baking sheet.
- Roast for 20-25 minutes, or until chicken is cooked through and sweet potato is tender.
- Serve chicken and sweet potato mixture over cooked brown rice.
