Ingredients
- 1 cup pumpkin puree
- 1/2 cup Greek yogurt
- 1/4 cup honey
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with liners or grease lightly.
- In a bowl, mix pumpkin puree, Greek yogurt, honey, eggs, and vanilla extract.
- In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Combine wet and dry ingredients. Stir until just mixed.
- Divide batter evenly into muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- Freeze for longer storage.
- Substitute maple syrup for honey if desired.
