Description

Delicious and healthy pumpkin muffins made with Greek yogurt for added protein and moisture. Perfect for breakfast or a snack.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup Greek yogurt
  • 1/4 cup honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt


Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with liners or grease lightly.
  2. In a bowl, mix pumpkin puree, Greek yogurt, honey, eggs, and vanilla extract.
  3. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Combine wet and dry ingredients. Stir until just mixed.
  5. Divide batter evenly into muffin cups.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool before serving.

Notes

  • Store in an airtight container for up to 3 days.
  • Freeze for longer storage.
  • Substitute maple syrup for honey if desired.
