Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked chicken breast, shredded (optional, for extra protein)
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Add broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until broccoli is tender.
  5. Carefully transfer the soup to a blender or use an immersion blender to blend until smooth.
  6. Return the soup to the pot. Stir in milk and cheddar cheese until cheese is melted and soup is heated through.
  7. If using, stir in shredded chicken.
