  • 4 ounces unsweetened chocolate, chopped
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup hot chocolate mix (powdered)
  • 1 cup mini marshmallows


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Melt butter and unsweetened chocolate in a double boiler or microwave. Stir until smooth.
  3. In a large bowl, whisk together melted chocolate mixture and sugar.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. In a separate bowl, whisk together flour, baking powder, salt, and hot chocolate mix.
  6. Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
  7. Spread batter evenly into the prepared baking pan.
  8. Sprinkle mini marshmallows over the top of the batter.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
