Description

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup milk
  • For the Frosting: 1 cup powdered sugar, 2 tablespoons milk, 1/4 teaspoon vanilla extract
  • Mini marshmallows


Instructions

  1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a small bowl, whisk together the cocoa powder and milk until smooth.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the cocoa mixture, beginning and ending with the dry ingredients. Mix until just combined.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  8. Bake for 9-11 minutes, or until the edges are set and the centers are still slightly soft.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  10. While the cookies cool, prepare the frosting. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and creamy.
  11. Once the cookies are completely cool, spread a thin layer of frosting on top of each cookie.
  12. Immediately top the frosting with mini marshmallows.
