Description
These Hot Cocoa Cookies capture the rich flavor of hot chocolate in a chewy cookie form. They are topped with a swirl of frosting and mini marshmallows, making them a perfect treat for any occasion.
Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1/4 cup milk
- For the Frosting: 1 cup powdered sugar, 2 tablespoons milk, 1/4 teaspoon vanilla extract
- Mini marshmallows
Instructions
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a small bowl, whisk together the cocoa powder and milk until smooth.
- Gradually add the dry ingredients to the wet ingredients, alternating with the cocoa mixture, beginning and ending with the dry ingredients. Mix until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
- Bake for 9-11 minutes, or until the edges are set and the centers are still slightly soft.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies cool, prepare the frosting. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and creamy.
- Once the cookies are completely cool, spread a thin layer of frosting on top of each cookie.
- Immediately top the frosting with mini marshmallows.
Notes
- For a richer chocolate flavor, use dark cocoa powder.
