  • 1 cup granulated sugar
  • 1/2 cup water
  • 1/2 cup heavy cream
  • 1/4 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Wooden sticks or skewers
  • Optional toppings: chocolate, nuts, sprinkles, etc.


Instructions

  1. Wash and dry the apples. Insert a wooden stick into the stem end of each apple.
  2. In a saucepan, combine sugar, water, and corn syrup. Cook over medium heat, stirring until sugar dissolves.
  3. Stop stirring and let the mixture boil until it turns amber. Use a candy thermometer to reach 245-250°F (firm-ball stage).
  4. Remove from heat and stir in heavy cream, salt, and vanilla extract. Be careful, it will bubble up.
  5. Dip each apple into the caramel, twirling to coat.
  6. Place the caramel-covered apples on a parchment-lined baking sheet.
  7. Add toppings immediately before the caramel sets.
  8. Chill in the refrigerator until the caramel is firm.
