Ingredients
- 6-8 medium apples
- 1 cup granulated sugar
- 1/2 cup water
- 1/2 cup heavy cream
- 1/4 cup light corn syrup
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Wooden sticks or skewers
- Optional toppings: chocolate, nuts, sprinkles, etc.
Instructions
- Wash and dry the apples. Insert a wooden stick into the stem end of each apple.
- In a saucepan, combine sugar, water, and corn syrup. Cook over medium heat, stirring until sugar dissolves.
- Stop stirring and let the mixture boil until it turns amber. Use a candy thermometer to reach 245-250°F (firm-ball stage).
- Remove from heat and stir in heavy cream, salt, and vanilla extract. Be careful, it will bubble up.
- Dip each apple into the caramel, twirling to coat.
- Place the caramel-covered apples on a parchment-lined baking sheet.
- Add toppings immediately before the caramel sets.
- Chill in the refrigerator until the caramel is firm.
