Ingredients
- 1 ½ cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 pint sour cream
Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs and melted butter. Press evenly into the bottom of a 6-inch or 7-inch springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla extract.
- Gently fold in sour cream until just combined.
- Pour the filling over the crust.
- Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
- Remove from oven and let cool completely on a wire rack.
- Chill in the refrigerator for at least 4 hours, or preferably overnight, before serving.
Notes
- For a smoother filling, ensure cream cheese is at room temperature.
- Avoid overmixing the batter once eggs are added.
- Cooling the cheesecake gradually prevents cracking.
- A water bath can help ensure even baking and prevent cracks, though it’s optional for this recipe.
