Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup packed light brown sugar
- 2 tablespoons ground cinnamon
- 1/2 cup powdered sugar
- 2-3 tablespoons milk
Instructions
- Cream together softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- In a small bowl, combine melted butter, brown sugar, and cinnamon for the filling.
- Divide dough in half. Roll out one half on a lightly floured surface into a rectangle.
- Spread half of the cinnamon filling over the dough, leaving a small border.
- Roll up the dough tightly from the long side. Slice into 1-inch thick rounds.
- Repeat with the second half of the dough and remaining filling.
- Place cookies on baking sheets lined with parchment paper.
- Bake at 375°F (190°C) for 9-12 minutes, or until edges are lightly golden.
- While cookies bake, whisk together powdered sugar and milk until smooth for the glaze.
- Drizzle glaze over warm cookies.
- Let cool completely before serving.
Notes
- For extra cinnamon flavor, you can add a pinch of nutmeg or cardamom to the filling.
- If the dough becomes too sticky, chill it for 30 minutes before rolling.
- Adjust the amount of milk in the glaze to reach your desired consistency.
