Ingredients
- 1 pound pork sausage
- 8 ounces cream cheese, softened
- 1 can (10 ounces) Rotel diced tomatoes with green chilies, drained
- 2 cups biscuit mix (like Bisquick)
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the pork sausage, softened cream cheese, drained Rotel tomatoes, biscuit mix, and shredded cheddar cheese (if using).
- Mix all ingredients thoroughly until well combined.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place the sausage balls on an ungreased baking sheet.
- Bake for 15-20 minutes, or until golden brown and cooked through.
- Serve hot.
Notes
- Drain the Rotel tomatoes very well to prevent the sausage balls from becoming too wet.
- For a spicier kick, use Rotel tomatoes with jalapeños or add a pinch of cayenne pepper to the mixture.
- These can be made ahead of time and reheated.
- For a gluten-free option, use a gluten-free biscuit mix.
