Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 2 (15 ounce) cans cannellini beans, rinsed and drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage with a slotted spoon and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth, scraping up any browned bits from the bottom of the pot.
  5. Add the cooked sausage, cannellini beans, oregano, basil, and red pepper flakes (if using).
  6. Bring the soup to a simmer, then reduce heat and cook for at least 20 minutes to allow flavors to meld.
  7. Season with salt and black pepper to taste.
  8. Stir in fresh parsley before serving.
  9. Serve hot, topped with Parmesan cheese if desired.

Notes

  • For a creamier soup, you can blend a portion of the beans with some broth and stir it back into the pot.
  • This soup can be made ahead of time and reheats well.
