Delicious and refreshing lemon raspberry bars.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cubed
- 2 large lemons, zested and juiced
- 3/4 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh raspberries, plus more for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together flour, powdered sugar, and salt.
- Cut in the butter until the mixture resembles coarse crumbs.
- Press into a 9×13 inch baking pan.
- Bake for 20 minutes.
- Whisk together lemon zest, lemon juice, sugar, and eggs.
- Pour over the baked crust.
- Bake for 20-25 minutes, or until set.
- Let cool completely.
- Garnish with fresh raspberries.
- Cut into bars and serve.
Notes
- For best results, use fresh raspberries.
- You can adjust the sweetness to your liking.
