Ingredients
- Chicken Breast: 1 pound
- Lemon: 1
- Tahini: 2 tablespoons
- Olive Oil: 2 tablespoons
- Garlic: 2 cloves
- Salt: To taste
- Black Pepper: To taste
- Quinoa: 1 cup, cooked
- Broccoli: 1 head, chopped
- Bell Pepper: 1, chopped
- Red Onion: 1/2, sliced
- Cucumber: 1/2, chopped
- Cherry Tomatoes: 1 cup, halved
- Fresh Parsley: For garnish
Instructions
- Preheat oven to 400°F (200°C).
- Whisk together lemon juice, tahini, olive oil, minced garlic, salt, and pepper.
- Toss chicken in the lemon tahini mixture.
- Place chicken on a baking sheet.
- Roast chicken for 20-25 minutes, or until cooked through.
- While chicken cooks, roast the broccoli, bell pepper, and red onion. Toss with olive oil, salt, and pepper. Roast for 15-20 minutes.
- Assemble bowls with quinoa, roasted vegetables, chicken, cucumber, and cherry tomatoes.
- Garnish with fresh parsley.
