Ingredients

  • Chicken Breast: 1 pound
  • Lemon: 1
  • Tahini: 2 tablespoons
  • Olive Oil: 2 tablespoons
  • Garlic: 2 cloves
  • Salt: To taste
  • Black Pepper: To taste
  • Quinoa: 1 cup, cooked
  • Broccoli: 1 head, chopped
  • Bell Pepper: 1, chopped
  • Red Onion: 1/2, sliced
  • Cucumber: 1/2, chopped
  • Cherry Tomatoes: 1 cup, halved
  • Fresh Parsley: For garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Whisk together lemon juice, tahini, olive oil, minced garlic, salt, and pepper.
  3. Toss chicken in the lemon tahini mixture.
  4. Place chicken on a baking sheet.
  5. Roast chicken for 20-25 minutes, or until cooked through.
  6. While chicken cooks, roast the broccoli, bell pepper, and red onion. Toss with olive oil, salt, and pepper. Roast for 15-20 minutes.
  7. Assemble bowls with quinoa, roasted vegetables, chicken, cucumber, and cherry tomatoes.
